Dutch ovens, which probably got their name from the Dutch peddlers who used to sell them door to door, have been around for about 200 years. It was an indispensible cooking tool during frontier times, and Lewis and Clark even listed it as their most important piece of equipment on their historic trek to the Pacific Northwest. It is a popular cooking utensil with campers, guides and river runners. Often times on float trips down the Salmon River in Idaho, you will see a camp cook stack dutch ovens 6 to 8 ovens high with hot coals between each one, rotating the ovens every so often to obtain even heat and cooking.

Dutch ovens are such a versatile cooking utensil because they maintain a relatively even heat and they also hold their heat well. Virtually anything that can be cooked can be cooked better in a dutch oven, from basic cowboy casseroles to fancy french dishes. Dutch ovens are also very easy to clean and maintain IF they are seasoned correctly. If you do not season your dutch oven correctly you will have a cleaning nightmare and your dutch oven will probably rust and make your food taste funny.
