T man's

Welcome to my page devoted to two of my favorite things - authentic Southern-style pit BBQ and blues music. Within this site you will find links to recipes, how to build a brick BBQ pit, how you can make the "Mother of all Charcoal Chimneys" and links to some very cool blues sites as well as a link to my dad's dutch oven page. Have fun, and keep the smoke rising!

What is "real" BBQ, you may ask? First of all, real barbecue is NOT your grandma's pork spare ribs cooked in an oven roaster and slathered up with Kraft barbecue sauce. It is not your favorite aunt's sloppy joes or your dad's hamburgers & steaks grilled over an open flame. True Southern-style barbecue is not even Lone Star Steakhouse, The Outback Steakhouse(or "Steakback Outhouse", as I affectionately like to call it), or even Tony Roma's. True Southern BBQ is an art that must be developed over time and it's secrets handed down from generation to generation and good friend to good friend.

By definition,

True BBQ is the art of slow cooking meat using hardwood smoke and indirect heat at low temperatures over an extended period of time. "Low & Slow" is the key to good BBQ. Good BBQ takes time, patience and passion, but the rewards are well worth the effort.
