Mustard Based Sauces

South Carolina Mustard Sauce


1/2 cup prepared mustard
1/2 cup sugar
2 cups cider vinegar
1 tablespoon plus 1 teaspoon chili powder
2 teaspoons black pepper
2 teaspoons white pepper
1 teaspoon soy sauce
1/4 cup butter

Mix together all ingredients except soy sauce and butter. Simmer in a sauce pan for approximately 10 minutes, then remove from heat and stir in soy sauce and butter.

This sauce is great with pulled pork shoulder or as a finishing sauce on pork ribs.


Southern Georgia Sauce


(This sauce is actually tomato and mustard based and so, has been included with the mustard based sauces.)
1 tablespoon chili powder
1 tablespoon ground black pepper
1 teaspoon brown sugar
1/4 teaspoon salt
2 cups ketchup
1/2 cup yellow mustard
2 tablespoons Worchestershire sauce
1 cup cider vinegar
1 tablespoon butter
2 to 4 tablespoons packed brown sugar (optional)

Mix the chili powder, black pepper, sugar, and salt in a bowl. In a large saucepan, whisk the ketchup and mustard into a smooth mixture. Stir in the Worchestershire sauce, vinegar, and spice mixture and cook over medium heat for 10 minutes. Reduce heat to low and add butter. Simmer the sauce until the butter is melted. Taste the sauce - if it's too tart add some brown sugar and simmer another 5 minutes. Serve warm.
